Judging from the 10.000 kms and 4 months we've been traveling within Turkey I would say pretty much everything and anything is allowed to go on Turkish roads, from tractors to horse carts, and we've seen plenty of pedestrians, bicycles and motorbikes riding on the hard shoulder (even against the direction of the traffic).
Police has never seemed bothered, although locals have told us that officially some rules do exist even if they're not enforced -- such as helmets for motorbikers or riding against the traffic, both a frequent sight.

I would avoid the Black Sea northern highway, too much constant heavy traffic and not pleasant at all.
Marvellous region to explore is the far east -- Kars, Artvin, border with Iran and Kurdistan, etc-- but it is pretty cold for camping during winter. Of course you can still count on Turkish hospitality.
The rest of Turkey depends on your preferences: Istanbul is huge but very interesting, the southern coast is mostly turistic but with stunning cliffs and beaches, and the middle mountainous region maybe is the more hidden and rural Turkey, with the exception of Adana the capital and Capadoccia the land of tourist-balloons.
Anyway you go will be great, actually, so enjoy!
Thanks a lot, I'm planning on going probably around next March/April or even later. I have bunch more questions:
How was camping? Was it easy to find places to set up camp and safe to camp? Did you plan your routes before or did you plan them as you went?
